Drain the soaked black lentils and kidney beans. Add them to a Instant Pot or large pot with 4 cups of agua para cocinar las lentejas and 1 tsp 1 tsp sal. In a large, heavy-bottomed skillet or pot, melt 3 tbsp 3 tbsp mantequilla sin sal with 1 tbsp 1 tbsp aceite neutro como vegetal o canola over medium heat. Pour in the 1 can tomates. Stir well to combine, then cook over medium heat for 15–20 minutes, stirring occasionally, until the tomato sauce has thickened significantly, darkened in color, and the fat (3 tbsp mantequilla sin sal/1 tbsp aceite neutro como vegetal o canola) starts to separate and pool around the edges. This step is key — it concentrates flavor and removes the raw tomato taste.

Add the cooked lentils and beans along with all their cooking liquid into the tomato base. Stir everything together thoroughly. Add up to 1 cup of agua para cocinar las lentejas if the dal looks too thick at this stage — it will thicken more as it simmers.

Bring to a gentle boil, then reduce heat to the lowest setting. Simmer uncovered, stirring every 10 minutes, for at least 30–40 minutes. The longer it simmers, the richer and more cohesive the flavor becomes. The dal should be thick, glossy, and deeply colored. Add a splash of agua para cocinar las lentejas if it gets too thick.

Stir in 2 tbsp 3 tbsp mantequilla sin sal, the ⅓ cup crema pesada más para rociar, and the remaining 0.5 tsp ½ tsp garam masala. Taste and adjust 1 tsp sal.
