Make the filling: In a mixing bowl, beat the softened queso crema with a hand mixer or sturdy spatula until smooth and fluffy, about 1 minute. Add the drained carne de cangrejo, sliced whole cebollas verdes finamente rebanadas, minced ajo, 1 tsp salsa Worcestershire, 1 tsp salsa de soya, ½ tsp ajo en polvo, and ¼ tsp polvo de cebolla. Mix until fully combined. Taste and adjust seasoning if needed. The filling should be thick and spreadable.

Set up your workstation: Lay a few envolturas de wonton flat on a clean surface. Keep the remaining envolturas de wonton covered with a damp paper towel to prevent them from drying out. Place the beaten small huevo batido wash in a mixing bowl nearby.

Fill the wontons: Place 1 heaping teaspoon of filling in the center of each 1 package envolturas de wonton — don't overfill or they'll burst during frying. Use your finger or a pastry brush to lightly brush all four edges of the wrapper with 1 small huevo batido wash.

Fold and seal: Bring two opposite corners together to form a triangle, pressing out any air pockets as you seal the edges firmly. Then bring the two remaining corners up and press them together at the top to form the classic 'nurse's cap' or four-point star shape. Press all seams firmly to ensure a tight seal — any gaps will let oil in and filling out. Repeat with remaining envolturas de wonton and filling.

Heat the oil: Pour 4 cups aceite vegetal into a deep pot or Dutch oven to a depth of at least 2–3 inches. Heat over medium-high heat until the oil reaches 350°F. Use a meat thermometer for accuracy — oil that's too cool makes greasy rangoon; too hot and the wrappers burn before the filling heats through.

Fry in batches: Carefully lower 6–8 rangoon into the hot oil using a slotted spoon — do not crowd the pot. Fry for 2–3 minutes, turning once or twice, until they are deep golden brown all over. Monitor the heat and adjust the burner as needed to keep oil at 350°F.
