Make the filling: In a Mixing Bowl, beat the softened 8 oz 奶油芝士软化至室温 with a Hand Mixer or sturdy spatula until smooth and fluffy, about 1 minute. Add the drained 1 can 蟹肉沥干并检查是否有贝壳, sliced 3 whole 青葱切成细丝, minced 2 cloves 蒜末, 1 tsp 伍斯特郡酱, 1 tsp 酱油, 2 cloves 蒜末, and ¼ tsp 洋葱粉. Mix until fully combined. Taste and adjust seasoning if needed. The filling should be thick and spreadable.

Set up your workstation: Lay a few 1 package 馄饨皮用湿毛巾盖住以防干燥 flat on a clean surface. Keep the remaining 1 package 馄饨皮用湿毛巾盖住以防干燥 covered with a damp paper towel to prevent them from drying out. Place the beaten 1 small 蛋液打散(用于密封的蛋液) wash in a Mixing Bowl nearby.

Fill the wontons: Place 1 heaping teaspoon of filling in the center of each 1 package 馄饨皮用湿毛巾盖住以防干燥 — don't overfill or they'll burst during frying. Use your finger or a Pastry Brush to lightly brush all four edges of the wrapper with 1 small 蛋液打散(用于密封的蛋液) wash.

Fold and seal: Bring two opposite corners together to form a triangle, pressing out any air pockets as you seal the edges firmly. Then bring the two remaining corners up and press them together at the top to form the classic 'nurse's cap' or four-point star shape. Press all seams firmly to ensure a tight seal — any gaps will let oil in and filling out. Repeat with remaining 1 package 馄饨皮用湿毛巾盖住以防干燥 and filling.

Uses

  • Vegetable Oil
  • 350°F
  • Medium-High

Heat the oil: Pour 4 cups 植物油用于油炸 into a deep Pot or Dutch Oven to a depth of at least 2–3 inches. Heat over medium-high heat until the oil reaches 350°F. Use a Meat Thermometer for accuracy — oil that's too cool makes greasy rangoon; too hot and the wrappers burn before the filling heats through.

Uses

  • Pot
  • Dutch Oven
  • Meat Thermometer
  • 2–3 min
  • 350°F

Fry in batches: Carefully lower 6–8 rangoon into the hot oil using a Slotted Spoon — do not crowd the pot. Fry for 2–3 minutes, turning once or twice, until they are deep golden brown all over. Monitor the heat and adjust the burner as needed to keep oil at 350°F.

  • 1–2 min

Drain and rest: Remove the fried rangoon with a Slotted Spoon and transfer to a Wire Rack set over a Baking Sheet (or a paper towel-lined plate). Let them rest for 1–2 minutes before serving — the filling will be very hot inside.

Uses

  • Slotted Spoon
  • Wire Rack
  • Baking Sheet

Serve: Arrange the crab rangoon on a platter and serve immediately with ½ cup 甜辣酱 for dipping. Optionally mix 1 tsp 酱油 and 1 tsp 米醋 together for a savory dipping alternative.
