Combine the diced tomates roma, ½ cebolla blanca, 1 jalapeño sin semillas y, and ¼ cup cilantro fresco picado in a mixing bowl. Add the 2 tbsp jugo de lima fresco de aproximadamente 1 lima and ½ tsp sal kosher, stir to combine, and set aside at room temperature. The longer it sits, the better the flavor — even 10 minutes makes a difference.

In a saucepan, bring 2¼ cups of agua, the ½ tsp sal kosher, and 1 tbsp mantequilla sin sal to a boil over medium-high heat. Add the rinsed 1 ½ cups arroz blanco de grano largo, stir once, and reduce heat to the lowest setting. Cover tightly and cook until all the agua is absorbed and the 1 ½ cups arroz blanco de grano largo is tender, about 18 minutes. Remove from heat and let steam, covered, for 5 more minutes.

Cook, stirring occasionally, until browned and no pink remains, about 7–8 minutes. Carefully drain off excess fat, leaving about 1 tablespoon in the pan.

Top each mixing bowl with a generous scoop of seasoned 1 ½ lb carne molida 80/20 recomendado and a spoonful of lata frijoles negros escurridos y.

Add a handful of shredded 1 cup lechuga romana, a big spoonful of fresh pico de gallo, sliced or mashed 2 aguacates rebanados o, shredded 1 cup mezcla de queso mexicano, and a dollop of crema agria.
