In a small mixing bowl, whisk together the 3 tbsp jugo de limón fresco aproximadamente 2 limones, 3 tbsp jugo de naranja fresco aproximadamente media naranja, 3 tbsp aceite vegetal, 4 cloves ajo, 1 tsp comino, 1 tsp polvo de chile, ½ tsp pimentón, 1 tsp sal kosher, and ½ tsp pimienta negra until combined.

Place the skirt steak in a Ziploc bag or shallow dish. Pour the marinade over the steak, seal, and turn to coat evenly. Refrigerate for at least 1 hour, or up to 8 hours.

Place the 6 whole tomatillos sin cáscara y, 1 jalapeño sin tallo halves (skin side up), ¼ cebolla blanca, and 4 cloves ajo on a dry cast iron skillet or baking sheet. Heat a cast iron skillet or grill over high heat until very hot and just beginning to smoke. Add a thin film of aceite vegetal if using a skillet. Cook the steak for 3–4 minutes per side for medium, or until nicely charred on the outside.
