Un rico y aterciopelado chocolate caliente hecho desde cero en la estufa — sin necesidad de sobres. Esta receta infalible usa polvo de cacao real y un toque de vainilla para un sabor profundo a chocolate que es cálido, acogedor y perfectamente dulce. In a small saucepan, whisk together the unsweetened cocoa powder, sugar, salt, and 2 tablespoons of ![hot water] over ^[medium-low heat]. Stir constantly for about 1 minute until the mixture forms a smooth, glossy paste. This step "blooms" the cocoa powder and prevents lumps.

Pour in the milk (and heavy cream if using), whisking continuously to fully incorporate the cocoa powder paste into the liquid. Increase heat to ^[medium].

Heat the mixture, stirring frequently, until it is steaming and just beginning to simmer around the edges — about 5 to 6 minutes. Do not let it come to a full boil, which can cause the milk to scorch or develop a skin.

If using chopped semi-sweet chocolate, remove the saucepan from the heat and add it now. Whisk until completely melted and the cocoa powder is velvety smooth.

Stir in the pure vanilla extract. Taste and adjust sweetness — add another teaspoon of sugar if you prefer it sweeter.

Pour into two mugs and top with marshmallows, whipped cream, or a light dusting of cocoa powder or cinnamon. Serve immediately.
