In a small mixing bowl, combine all the spice blend ingredients — 3 tbsp polvo de chili, 2 tsp comino, 1 tsp pimentón, 1 tsp orégano seco, ½ tsp polvo de ajo, ½ tsp polvo de cebolla, ¼ tsp pimienta de cayena ajustar, 1 ½ tsp sal kosher más, ½ tsp pimienta negra, and 1 tsp azúcar moreno (if using). Mix well and set aside.

Heat the 2 tbsp aceite de oliva in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the diced cebolla amarilla and 1 pimiento verde and cook, stirring occasionally, until softened and lightly golden, about 5–6 minutes.

Add the minced dientes de ajo and cook for 1 minute more, stirring constantly, until fragrant.

Add the 2 tbsp pasta de tomate directly to the meat and stir it in. Cook for 2 minutes, stirring frequently — this step deepens the tomato flavor and removes any raw paste taste.

Pour in the entire spice blend and stir to coat the meat evenly. Cook for 1 minute to bloom the spices in the fat.

Add the diced lata de tomates (with their juices), 1 lata de salsa de tomate, and 1 cup caldo de res. Stir everything together, scraping up any browned bits from the bottom of the pot.

Add the drained and rinsed 2 latas de frijoles rojos escurridos y enjuagados. Stir to combine, then bring the chili to a boil over high heat.
