  • Baking Dish

Peel the 4 lb batatas peladas y cortadas en rodajas de 1/2-inch and slice them into uniform 1/2-inch rounds. Consistent thickness ensures they cook evenly. Arrange the slices in overlapping layers in the prepared Baking Dish.

In a Saucepan (medium) over medium heat, combine the ½ cup mantequilla sin sal cortada en trozos, 1 cup azúcar moreno claro prensado, ¼ cup azúcar granulada, and ¼ cup agua. Stir frequently until the ½ cup mantequilla sin sal cortada en trozos melts and the sugars dissolve completely, about 3–4 minutes. Do not let it come to a full boil.

Uses

  • Saucepan

Remove the Saucepan from heat and stir in the 1 tsp extracto puro de vainilla, 1 tsp canela molida, ¼ tsp nuez moscada molida, ¼ tsp jengibre molido (if using), and ½ tsp sal fina. The syrup should smell fragrant and look glossy.

Uses

  • Saucepan

Pour the warm syrup evenly over the 4 lb batatas peladas y cortadas en rodajas de 1/2-inch slices, making sure every piece is coated. Tilt the Baking Dish gently if needed to distribute the syrup.

Carefully remove the Aluminum Foil. Using a large Wooden Spoon or Pastry Brush, spoon the syrup from the bottom of the Baking Dish back over the 4 lb batatas peladas y cortadas en rodajas de 1/2-inch. Return the Baking Dish to the Oven uncovered and bake for another 20–25 minutes, basting once more halfway through, until the potatoes are completely tender and the syrup has thickened and turned deep amber.
