Peel the 4 lb batatas peladas y and slice them into uniform 1/2-inch rounds. Consistent thickness ensures they cook evenly. Arrange the slices in overlapping layers in the prepared baking dish.

In a saucepan (medium) over medium heat, combine the ½ cup mantequilla sin sal, 1 cup azúcar moreno claro, ¼ cup azúcar granulada, and ¼ cup agua. Stir frequently until the ½ cup mantequilla sin sal melts and the sugars dissolve completely, about 3–4 minutes. Do not let it come to a full boil.

Remove the saucepan from heat and stir in the 1 tsp extracto puro de vainilla, 1 tsp canela, ¼ tsp nuez moscada, ¼ tsp jengibre (if using), and ½ tsp sal fina. The syrup should smell fragrant and look glossy.

Pour the warm syrup evenly over the 4 lb batatas peladas y slices, making sure every piece is coated. Tilt the baking dish gently if needed to distribute the syrup.
