Using a wooden spoon, scoop the flesh of the aguacates medianos maduros into a low serving bowl, discarding any bruised, browned areas.

Using a pastry brush, potato masher, or fork, mash up the 4 aguacates medianos maduros until it reaches your desired texture (I like my guacamole to have some texture, so I stop mashing once there are just small chunks remaining).

Promptly add the ½ taza de cebolla blanca finamente picada, ¼ taza de cilantro fresco finamente picado, 1 jalapeño pequeño, 3 cucharadas de jugo de limón (de aproximadamente 1 ½ limones), ¼ cucharadita de cilantro, and 1 cucharadita de sal kosher. Stir to combine.

Taste and add additional 1 cucharadita de sal kosher (I often add up to ½ tsp more), until the flavors really sing.
