Make the vinaigrette: In a small mixing bowl or quart jar, combine the 2 tbsp jugo de limón, 1 tsp mostaza Dijon, grated small ajo rallado o picado fino, ¼ tsp sal kosher, pimienta negra molida fresco, and ½ tsp miel (if using). Whisk or shake to combine.

Slowly drizzle in the ¼ cup aceite de oliva virgen extra while whisking constantly (or add it to the quart jar and shake vigorously) until the dressing is emulsified and slightly thickened. Stir in the 1 tsp cáscara de limón if using. Taste and adjust ¼ tsp sal kosher or 2 tbsp jugo de limón as needed.

Place the 5 oz rúcula bebé in a large salad mixing bowl. Drizzle about three-quarters of the vinaigrette over the greens — you can always add more, but you can't take it away.

Gently toss the 5 oz rúcula bebé with your hands or tongs until every leaf is lightly coated. Taste a leaf — add more dressing if needed.

Transfer to a serving platter or individual plates. Scatter the shaved 2 oz queso Parmesano generously over the top.

Finish with several generous cracks of fresh pimienta negra molida fresco. Serve immediately.
