    Prep the Ham for Glazing

    Pull the ham from the fridge 30–45 minutes before baking so it heats evenly. Set it on a rack in a shallow roasting pan. Score the surface in a diamond pattern, about 1/4 inch deep, so the glaze penetrates the meat. Insert an oven-safe thermometer into the thickest part — keep the tip clear of bone and fat pockets to get an accurate read. Measure your glaze ingredients and have them ready before the ham goes in.

    Hornea y glasea el jamón

    Precalienta el horno a 325°F. Coloca el jamón montado en un rack en el horno y hornea cubierto. Tiempo: 16–20 min/lb para un jamón con hueso de 7–10 lb; 15–18 min/lb para 10–14 lb; aproximadamente 1.5–2 horas para 5–7 lb.     Retira el jamón a 140–145°F, cubre suelto con papel de aluminio, y descansa 10–15 minutos antes de cortar. Esto mantiene las rebanadas jugosas. Para jamón con hueso: divide junto al hueso, corta el lado sin hueso uniformemente, luego inclina tu cuchillo lejos del hueso en el lado con hueso. No cocines excesivamente —la mayoría de los jamones al por menor ya están completamente cocidos; solo estás recalentando y construyendo una costra. Arriba de 145°F la carne se seca. No glasees demasiado temprano o el azúcar se quemará.
