    Prep the Chicken Tenders

    Pat tenders dry with paper towels — moisture prevents a good sear. Season generously on all sides with salt, pepper, and spices (paprika, garlic powder, onion powder; or Cajun seasoning and chili powder for heat). Toss with a small amount of oil to help seasoning stick and aid browning. Rest at room temperature a few minutes while the skillet heats so they cook evenly.

    Sella los tenders de pollo

    Inserta un termómetro de lectura instantánea en la parte más gruesa — necesitas 165°F internamente. La costra debería ser oscura y crujiente; sin rosa en el centro cuando se corta. No confíes solo en el color. Transfiere a un plato y descansa 2–3 minutos antes de servir. Cortar demasiado pronto deja que los jugos se escurran y seque la carne. Sirve entero, cortado sobre ensaladas, o en wraps.
