
Palomitas en la Estufa

Palomitas clásicas hechas en la estufa a la antigua usanza — en una olla con aceite en la cocina. Perfectamente esponjosas, doradas y crujientes con la cantidad justa de sal. Este método confiable utiliza la prueba de 3 granos para lograr la temperatura de reventado perfecta cada vez, dándote una olla llena de palomitas ligeras y aireadas con mínimos granos sin reventar. No se necesita equipo especial — solo una olla, una tapa y un poco de paciencia.

Add the neutral oil to a large, heavy-bottomed Pot (at least 4-quart capacity) and place it over ^[medium-high heat]. Drop in 3 single Popcorn Kernels, then put the lid on the pot.

Wait for all 3 test kernels to pop. This tells you the neutral oil has reached the ideal popping temperature (around ![400°F]). This usually takes 2–3 minutes. Don't rush this step — starting too cool leads to chewy, unpopped kernels.

Once all 3 kernels have popped, remove the Pot from the heat and add the remaining ½ cup of Popcorn Kernels in a single layer. Put the lid back on and let the pot sit off the heat for 30 seconds. This brings all the kernels to the same temperature, dramatically reducing unpopped kernels.

Return the Pot to ^[medium-high heat]. As the kernels begin to pop, gently shake the pot back and forth over the burner every 15–20 seconds to prevent burning and distribute heat evenly. Keep the lid slightly ajar (use a Wooden Spoon or tilt it a crack) to let steam escape — this keeps the popcorn crispy instead of chewy.

Listen carefully: when the popping slows to about 2–3 seconds between pops, immediately remove the Pot from the heat. Don't wait for complete silence — the residual heat will pop the last few kernels and the rest will burn if left too long.

Carefully remove the lid (tilt it away from you to avoid steam burns) and immediately pour the popcorn into a large Mixing Bowl. Drizzle with melted butter if using, sprinkle with fine salt, and toss well to coat evenly. Taste and adjust salt as needed. Serve immediately.
