Bring a large Pot of water to a boil. Add the 1 tbsp sal kosher para el agua de cocción de la pasta and cook the 1 lb espaguetis according to package directions until al dente (usually 1–2 minutes less than the package time). Before draining, reserve at least 1 full cup of pasta cooking water — this starchy water is essential for your sauce.

Uses

  • Pot

While the pasta cooks, whisk together the 2 huevos grandes, a temperatura ambiente and 2 huevos grandes, a temperatura ambiente in a medium Mixing Bowl. Add the grated 1 cup Pecorino Romano finamente rallado, más para servir and ½ cup Parmesano finamente rallado, más para servir and whisk until you have a thick, smooth paste. Season with the 1 ½ tsp pimienta negra molida gruesa, más para servir. Set aside at room temperature.

  • Medium

Place the 6 oz de guanciale, cortado en cubos pequeños o lardones (or 6 oz pancetta, cortado en cubos pequeños o lardones) in a large, cold Skillet. Turn the heat to medium and cook, stirring occasionally, until the fat has rendered and the pieces are golden and slightly crispy, about 6–8 minutes. Remove the Skillet from heat and let it cool for 2 minutes — this is a critical step to avoid scrambling the eggs later.

Uses

  • Skillet

Drain the 1 lb espaguetis and immediately add it to the Skillet with the 6 oz de guanciale, cortado en cubos pequeños o lardones (off the heat). Toss well with Tongs to coat the pasta in the rendered fat.

Uses

  • Skillet
  • Tongs

Add a splash of the reserved pasta water (about 1/4 cup) to the Skillet and toss again. The pasta should cool slightly and the pan should no longer be smoking hot — you want it warm, not scorching.

Uses

  • Skillet

Pour the egg-and-cheese mixture over the pasta. Using Tongs, toss quickly and continuously while adding more pasta water a splash at a time (up to 3/4 cup total) until a glossy, creamy sauce coats every strand. The residual heat from the pasta and pan will gently cook the 2 huevos grandes, a temperatura ambiente into a silky sauce — keep tossing and never let it sit still. If it looks too thick, add more pasta water. If it looks too thin, keep tossing — it will tighten as it cools slightly.

Uses

  • Tongs

Taste and adjust 1 tbsp sal kosher para el agua de cocción de la pasta if needed (the cheese and 6 oz de guanciale, cortado en cubos pequeños o lardones are already salty, so you may not need any). Divide into warm bowls, finish with an extra grating of 1 cup Pecorino Romano finamente rallado, más para servir and ½ cup Parmesano finamente rallado, más para servir, and a generous crack of 1 ½ tsp pimienta negra molida gruesa, más para servir. Serve immediately.
