Wash the 5 oz lechugas baby mixtas como spring mix and chopped corazón de lechuga romana in a large mixing bowl of cold water. Lift the greens out (letting any grit sink to the bottom), then spin them thoroughly dry in a salad spinner. Damp greens will dilute the dressing — this step matters. Transfer to a large salad mixing bowl.

Prepare the vegetables: halve the 1 cup tomates cherry, slice the 1 pepino inglés into thin half-moons, and very thinly slice the ¼ cebolla roja cortada muy finamente en rodajas. If you find raw ¼ cebolla roja cortada muy finamente en rodajas too sharp, soak the slices in cold water for 5 minutes, then drain and pat dry — this mellows the bite significantly.

Add the 1 cup tomates cherry, 1 pepino inglés, ¼ cebolla roja cortada muy finamente en rodajas, and ¼ cup perejil de hoja plana fresco desmenuzado toscamente (if using) to the mixing bowl with the greens. Do not toss yet.

In a small mixing bowl or quart jar, combine the 3 tbsp aceite de oliva virgen extra, 1 ½ tbsp jugo de limón, 1 tsp mostaza Dijon, ½ tsp miel, grated diente de ajo rallado finamente o picado, ¼ tsp sal kosher más, and ⅛ tsp pimienta negra. Whisk vigorously (or seal the quart jar and shake) until the dressing is fully emulsified and slightly thickened — about 30 seconds.

Taste the dressing and adjust: add a tiny pinch more ¼ tsp sal kosher más if it tastes flat, a few more drops of jugo de limón if it needs brightness, or a touch more ½ tsp miel if it's too sharp. The dressing should taste bold and slightly salty on its own — it will mellow once tossed with the greens.

Just before serving, drizzle about two-thirds of the dressing over the salad. Using clean hands or tongs, gently toss until every leaf is lightly coated. Taste a leaf — add more dressing if needed. Season with an extra pinch of sal kosher más and a grind of pimienta negra. Serve immediately.
