In a small mixing bowl, combine the 1 tbsp azúcar morena, 1 tbsp paprika, 1 ½ tsp sal kosher, 1 tsp pimienta negra, 1 tsp polvo de ajo, 1 tsp polvo de cebolla, ½ tsp comino, and ½ tsp pimienta de cayena (if using). Mix well.

Pat the 4 lb espaldilla de cerdo completely dry with paper towels. This helps the rub adhere and promotes better flavor development. Rub the spice mixture all over every surface of the espaldilla de cerdo, pressing it in firmly.

Place the chopped yellow cebolla and smashed 4 cloves ajo aplastado cloves in the bottom of your slow cooker. Pour in the ½ cup vinagre de sidra de manzana, ½ cup caldo de pollo, and 1 tbsp salsa Worcestershire.

Set the rubbed 4 lb espaldilla de cerdo on top of the yellow cebolla and 4 cloves ajo aplastado. Spoon 1 cup of the salsa grill over the top of the espaldilla de cerdo, coating it evenly.

Cover and cook on LOW for 8–10 hours or on HIGH for 5–6 hours, until the 4 lb espaldilla de cerdo is completely tender and easily shreds with a fork.
