Una salsa clásica de queso pimentón sureña que es cremosa, picante y llena de sabor a cheddar afilado. Esta mezcla que agrada a todos se prepara en minutos con ingredientes simples de la despensa y sabe aún mejor después de pasar un tiempo en el refrigerador. Perfecta para galletas, palitos de apio, sándwiches o como cobertura para hamburguesas — esta es la versión auténtica, sin atajos necesarios.

Grate the Sharp Cheddar Cheese using the large holes of a Grater. Freshly grated cheese is key — it melts into the dip more smoothly and has better flavor than pre-shredded bags, which contain anti-caking agents.

In a large Mixing Bowl, beat the softened Cream Cheese with a Hand Mixer or stiff Spatula until it is smooth and lump-free, about 1–2 minutes. This step ensures a creamy, cohesive base.

Add the Mayonnaise to the Cream Cheese and mix until fully combined and fluffy.

Drain the jar of diced Pimentos very well, pressing gently with a paper towel or the back of a spoon to remove excess liquid. Too much liquid will make the dip watery.

Add the drained Pimentos, Apple Cider Vinegar, Onion Powder, Garlic Powder, Cayenne Pepper, Worcestershire Sauce, and Black Pepper to the bowl. Stir to combine.

Fold in the grated Sharp Cheddar Cheese using a Spatula, mixing until everything is evenly distributed. For a chunkier dip, fold gently and stop early. For a smoother dip, mix more thoroughly or use the Hand Mixer for 20–30 seconds.

Taste and adjust seasoning — add a pinch of Kosher Salt if needed, more Cayenne Pepper for heat, or a splash more Apple Cider Vinegar for tang.

Transfer to a serving bowl, cover tightly with Plastic Wrap, and refrigerate for at least 30 minutes (ideally 1–2 hours) before serving. Chilling allows the flavors to meld and the dip to firm up to a perfect spreadable consistency.

Before serving, let the dip sit at room temperature for 10 minutes to soften slightly. Garnish with a sprinkle of Paprika and fresh Chives if desired. Serve with crackers, celery sticks, sliced baguette, or crudités.
