  • 20–25 min
  • 450°F

Preheat your oven to 450°F. Line a baking sheet with aluminum foil. Place the whole 4 pimientos rojos enteros directly on the baking sheet and roast for 20–25 minutes, turning once halfway through with tongs, until the skins are charred and blistered all over and the peppers have collapsed.

Uses

  • Oven
  • Baking Sheet
  • Aluminum Foil
  • Tongs
  • Red Bell Pepper
  • Cayenne Pepper
  • 10–15 min

Transfer the roasted peppers to a mixing bowl and cover tightly with plastic wrap or a plate. Let them steam for 10–15 minutes — this makes peeling effortless. Once cool enough to handle, peel off the skins, remove the stems, and discard the seeds. Don't rinse them under water; you'll wash away flavor. Pat dry with a paper towel.

Uses

  • Mixing Bowl
  • Plastic Wrap
  • Red Bell Pepper
  • Cayenne Pepper
  • Pomegranate Seeds

  • Medium

While the peppers steam, toast the 1 cup mitades de nueces ligeramente in a dry skillet over medium heat for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Watch carefully — they can burn quickly. Remove from heat and let cool slightly.

Uses

  • Skillet
  • Red Bell Pepper
  • Cayenne Pepper

Add the toasted 1 cup mitades de nueces ligeramente and 2 dientes de ajo to a food processor and pulse 5–6 times until coarsely ground. Don't over-process at this stage — you want some texture in the 1 cup mitades de nueces ligeramente.

Uses

  • Food Processor
  • 1–1 min

Add the roasted, peeled 4 pimientos rojos enteros, ½ cup migas de pan simple, 3 tbsp melaza de granada, 2 tbsp aceite de oliva virgen extra para rociar, 1 tbsp jugo de limón fresco, 1 tsp comino, 1 tsp pimentón dulce, ½ tsp sal kosher más, and ¼ tsp cayena opcional (or the flakes + paprika substitute). Process until you reach a thick, slightly textured paste — about 30–45 seconds. Scrape down the sides and pulse again to incorporate everything evenly. Taste and adjust: more 3 tbsp melaza de granada for tang, 1 tbsp jugo de limón fresco for brightness, ½ tsp sal kosher más as needed, or ¼ tsp cayena opcional for heat.

Uses

  • Kosher Salt
  • Paprika

Transfer the muhammara to a wide, shallow serving mixing bowl. Use the back of a spoon to swirl the surface. Drizzle generously with 2 tbsp aceite de oliva virgen extra para rociar, then scatter 1 tbsp semillas de granada para decorar, chopped mitades de nueces ligeramente, and a pinch of cayena opcional or 1 tsp pimentón dulce over the top. Serve at room temperature with warm pita bread, flatbreads, or crudités.
