Preheat your grill to medium-high heat (about 400–450°F). While the grill heats, mix together the ⅓ cup mayonesa, ⅓ cup crema mexicana, grated ajo finamente rallado o picado, 1 tbsp jugo de lima, and ¼ tsp sal kosher in a mixing bowl until smooth. Set aside.

Lightly brush each ear of mazorcas de maíz with 1 tbsp aceite neutro vegetal on all sides. This helps prevent sticking and promotes even charring.

Place the 4 mazorcas de maíz directly on the hot grill grates. Cook, turning with tongs every 3–4 minutes, until the 4 mazorcas de maíz is charred in spots and cooked through — about 10–12 minutes total. You want a good mix of golden kernels and dark char marks.

Remove the 4 mazorcas de maíz from the grill and let it rest for 1 minute. Using a pastry brush or wooden spoon, generously coat each ear all over with the creamy sauce. Don't be shy — the more the better.

Immediately roll or sprinkle each sauced ear generously with crumbled ½ cup queso cotija so it sticks to the sauce.

Dust each ear with 1 tsp chile en polvo and ¼ tsp pimentón. Add a pinch of pimienta de cayena if you'd like more heat. Scatter chopped cilantro fresco picado grueso over the top if using.
