Make the simple syrup: Combine 1 cup 1 cup agua and 1 cup 1 cup azúcar granulada in a saucepan over medium heat. Stir until the 1 cup azúcar granulada is completely dissolved, about 3–4 minutes. Do not let it boil vigorously — just a gentle simmer is enough. Remove from heat.

Add the 1 tbsp ralladura de limón to the hot syrup, stir, and let it steep for 10 minutes. This infuses the syrup with bright, aromatic lemon oil from the 1 tbsp ralladura de limón.

Strain the syrup through a sieve into a mixing bowl, pressing the 1 tbsp ralladura de limón to extract as much flavor as possible. Discard the 1 tbsp ralladura de limón solids.

If using an ice cream maker: Pour the chilled base into your machine and churn according to the manufacturer's instructions, typically 20–25 minutes, until the sorbet is thick, opaque, and has the consistency of soft-serve.

Optional — for an extra-smooth, lighter texture: Lightly whisk one 1 large clara de huevo until just foamy (not stiff), then add it to the machine during the last 5 minutes of churning. This adds body and prevents iciness.

No ice cream maker? Pour the cold base into a shallow freezer-safe dish. Freeze for 45 minutes, then scrape and stir vigorously with a fork, breaking up any ice crystals. Repeat every 30–45 minutes for 3–4 hours until the sorbet is fully frozen and fluffy.

Transfer the churned sorbet to a freezer-safe airtight container, smooth the top, and press a piece of plastic wrap directly onto the surface to prevent ice crystals from forming. Freeze for at least 2 hours until firm and scoopable.
