  • 400°F

Preheat your oven to 400°F. Line a large rimmed baking sheet with aluminum foil and place a wire rack on top. Lightly spray the rack with cooking spray. The rack allows heat to circulate under the poppers and lets 12 slices tocino (de corte delgado fat drip away.

Wearing disposable gloves if you have them, halve the 12 chiles jalapeños frescos lengthwise. Use a small spoon or melon baller to scrape out the seeds and white membranes — this is where most of the heat lives. For milder poppers, remove everything; for more heat, leave a little membrane in. Arrange the 12 chiles jalapeños frescos halves cut-side up on the prepared rack.

Uses

  • Jalapeño

In a mixing bowl, combine the softened queso crema, shredded 1 cup queso cheddar fuerte, minced dientes ajo, 1 tsp pimentón, ½ tsp polvo de cebolla, ¼ tsp pimienta negra, and ¼ tsp sal kosher. Mix vigorously with a fork or spatula until smooth and fully combined. Fold in 2 tbsp cebolletas frescas finamente picadas if using. Taste and adjust seasoning.

  • Sharp Cheddar Cheese

Spoon or pipe the filling into each 12 chiles jalapeños frescos half, mounding it slightly above the rim. A small cookie scoop or a Ziploc bag with the corner snipped off makes this quick and tidy.

Uses

  • Ziploc Bag
  • Jalapeño

Wrap each stuffed 12 chiles jalapeños frescos half with one half-strip of tocino (de corte delgado, stretching it slightly as you wrap so it grips the pepper. Tuck the 12 slices tocino (de corte delgado end underneath the popper so it doesn't unravel. The 12 slices tocino (de corte delgado should cover most of the filling.
