Pick over the dried 1 libra guisantes de ojo negro secos and discard any shriveled peas or debris. Rinse them well under cold water. (No overnight soak required — the long simmer will do the work.) Set aside.

Uses

  • Black-Eyed Peas
  • Water
  • 6–8 min
  • Medium

In a large Dutch oven over medium heat, cook the 4 rebanadas tocino pieces until the fat is rendered and the bacon is lightly crispy, about 6–8 minutes. Use a slotted spoon to transfer the bacon to a paper-towel-lined plate, leaving the drippings in the pot.

Uses

  • Dutch Oven
  • Slotted Spoon
  • Bacon
  • 6–8 min
  • Medium

Add the diced cebolla amarilla, 3 tallos apio, and 1 pimiento verde to the pot with the bacon drippings. Sauté over medium heat, stirring occasionally, until the vegetables are softened and translucent, about 6–8 minutes.

Uses

  • Bacon
  • 1 min
  • Medium

Add the minced dientes ajo, 1 cucharadita pimentón, ½ cucharadita tomillo seco, and ½ cucharadita pimienta cayena. Stir and cook for 1 minute until fragrant.

  • High

Add the rinsed 1 libra guisantes de ojo negro secos, 1 codillo de jamón, 6 taza agua, 2 taza caldo de pollo bajo en sodio, 2 pieza hojas de laurel, 1 tsp 1 cucharadita sal kosher más, and ½ cucharadita pimienta negra. Stir to combine and bring to a boil over high heat.

  • 60–75 min
  • Low

Once boiling, reduce the heat to low, cover with the lid slightly ajar, and simmer for 60–75 minutes, stirring occasionally, until the 1 libra guisantes de ojo negro secos are fully tender but still holding their shape. If the liquid drops below the level of the peas during cooking, add 6 taza agua 1/2 cup at a time.

Uses

  • Black-Eyed Peas

Remove the 1 codillo de jamón and 2 pieza hojas de laurel. Once the 1 codillo de jamón is cool enough to handle, pull the meat from the bone, shred it into bite-sized pieces, and return the meat to the pot. Discard the bone and 2 pieza hojas de laurel.

Taste the broth and adjust seasoning with 1 cucharadita sal kosher más and ½ cucharadita pimienta negra as needed. You should have about 3 cups of liquid remaining in the pot. If you have more, raise the heat and simmer uncovered for a few minutes to reduce. If you have less, add 6 taza agua to reach 3 cups of liquid.

Uses

  • Low-Sodium Chicken Broth
  • 18–20 min
  • Low

Stir in the rinsed 1 ½ taza arroz blanco de grano largo and the reserved cooked 4 rebanadas tocino. Bring back to a gentle boil, then reduce the heat to the lowest setting, cover tightly, and cook for 18–20 minutes until the 1 ½ taza arroz blanco de grano largo is fully cooked and has absorbed the liquid. Do not lift the lid during this time.

  • 5 min

Remove from heat and let the pot sit, still covered, for 5 minutes to allow the 1 ½ taza arroz blanco de grano largo to steam and finish. Fluff gently with a dipping fork.

Uses

  • Dipping Fork

Serve in bowls topped with sliced tallos cebolletas and a dash of cucharada salsa picante como Crystal if desired. Collard greens and cornbread make classic accompaniments.

Uses
