While the pastry bakes, make the syrup. As soon as the galaktoboureko comes out of the Oven, slowly and evenly ladle the warm syrup all over the hot pastry. Pour it gradually — about a third at a time — letting it absorb before adding more. The hot pastry absorbs syrup best when there's a temperature contrast (hot pastry, warm syrup). You will hear it sizzle and bubble — that's perfect.

Allow the galaktoboureko to rest uncovered at room temperature for at least 1 hour before cutting along the scored lines and serving. This resting time is essential — the custard firms up, the syrup fully absorbs, and the flavors meld beautifully. Serve at room temperature for the best texture and flavor.
