Preheat your oven to 375°F. Grease a baking dish with 4 tbsp mantequilla sin sal or cooking spray and set aside.

Bring a large pot of heavily salted water to a boil. Cook the 12 oz fideos de huevo anchos for 2 minutes LESS than the package directions (they'll finish cooking in the oven). Drain well in a colander and set aside.

In a large skillet over medium heat, melt 4 tablespoons of mantequilla sin sal. Add the diced cebolla amarilla mediana and sliced tallos de apio and cook, stirring occasionally, until softened and translucent, about 5–6 minutes. Add the minced dientes de ajo and cook for 1 more minute until fragrant.

Sprinkle the ¼ cup harina de trigo over the vegetables and stir constantly for 1–2 minutes to cook out the raw flour taste. The mixture will look dry and pasty — that's perfect.

Slowly pour in the warm 2 ½ cups leche entera and 1 cup caldo de pollo bajo en sodio, whisking constantly to prevent lumps. Bring the sauce to a gentle simmer over medium heat, whisking frequently, until it thickens enough to coat the back of a spoon, about 4–5 minutes.

Remove the skillet from heat. Stir in the shredded 1 cup queso cheddar agudo, 2 tbsp mostaza Dijon, 1 tbsp salsa Worcestershire, 1 tsp sal kosher, ½ tsp pimienta negra, and ¼ tsp polvo de ajo. Stir until the cheese is fully melted and the sauce is smooth.

Add the drained latas de atún blanco sólido (breaking up any large chunks), thawed 1 ½ cups guisantes congelados, and cooked 12 oz fideos de huevo anchos to the skillet. Gently fold everything together until the noodles are evenly coated in the sauce. Taste and adjust 1 tsp sal kosher and ½ tsp pimienta negra as needed.
