Preheat your oven to 400°F. Line a large baking sheet with parchment paper or lightly grease it with cooking spray.

Wipe the 24 whole button mushrooms large clean with a damp paper towel — do not rinse them under water or they'll become soggy. Gently twist or pull out the stems and set them aside. Lightly brush the outside of each 24 whole button mushrooms large cap with 2 tbsp olive oil and place them cavity-side up on the prepared baking sheet.

In a mixing bowl, combine the cooked ½ lb Italian sausage, sautéed 1 small yellow onion-24 whole button mushrooms large mixture, softened cream cheese, ½ cup Parmesan cheese freshly grated, ¼ cup Italian breadcrumbs, 2 tbsp fresh parsley finely chopped, ½ tsp kosher salt, ¼ tsp black pepper, and ¼ tsp crushed red pepper flakes (if using). Stir together until everything is well incorporated and the mixture holds together. Taste and adjust seasoning if needed.
