In a large Mixing Bowl, whisk together the 1 ¼ cups harina de trigo, ½ tsp sal, and ½ tsp azúcar granulada. Drizzle in 3 tablespoons of 3 tbsp agua helada, one tablespoon at a time, tossing with a fork after each addition. Stop adding 3 tbsp agua helada when the dough just begins to clump together and holds when you pinch it. Do not overwork it.

Turn the dough out onto a lightly floured surface, press it into a flat disc, and wrap tightly in Plastic Wrap. Refrigerate for at least 30 minutes (or up to 2 days). This relaxes the gluten and firms up the ½ tsp sal for a flakier crust.

After chilling, roll the dough on a lightly floured surface into a 12-inch round, about 1/8 inch thick. Carefully transfer it to a Pie Dish, pressing it gently into the bottom and sides. Trim the overhang to about 1 inch, fold it under itself, and crimp the edges decoratively. Refrigerate the lined Pie Dish for 15 minutes while you prepare the filling.

Preheat your Oven to 350°F. Position a rack in the lower third of the Oven — this helps the bottom crust bake through without the top over-browning.

In a large Mixing Bowl, whisk the 3 huevos a temperatura ambiente until smooth and slightly frothy.
