In a large mixing bowl, combine the sliced duraznos frescos (pelados y rebanados) o congelados (descongelados y escurridos) —, ½ cup azúcar granulado, 1 tbsp jugo de limón, 1 tsp canela, ¼ tsp nuez moscada, 1 tbsp maicena, and 1 tsp extracto de vainilla. Toss gently until the 6 cups duraznos frescos (pelados y rebanados) o congelados (descongelados y escurridos) — are evenly coated. The ½ cup azúcar granulado will begin to draw out the juices — that's exactly what you want.
