Make sure your 8 oz queso crema is fully softened — this is the most important step for a smooth, spreadable filling. Leave it out at room temperature for at least 30 minutes, or microwave in 10-second bursts until soft but not melted.

In a mixing bowl, beat together the softened queso crema, 3 tbsp crema agria, 1 oz mezcla de condimento ranch, minced ajo, and chopped cebollino fresco picado finamente until completely smooth and well combined. Taste and adjust seasoning if needed. The mixture should be thick but easily spreadable.

Lay one large large tortillas de harina flat on a clean work surface. Spread roughly one-quarter of the herbed 8 oz queso crema mixture evenly across the entire surface of the tortilla, going all the way to the edges — this acts as the 'glue' that holds the roll together.

Layer the fillings evenly across the tortilla in this order: a single layer of pavo para deli slices, then 4 oz jamón para deli (and 4 oz salami para deli if using), leaving about a half-inch border at the far edge. Scatter shredded 1 cup queso cheddar over the meats.

Top with a layer of espinaca bebé leaves, then sprinkle over the diced pimiento rojo, sliced cebolletas en rebanadas finas, and ¼ cup aceitunas negras (if using). Don't overfill — a thin, even layer of each ingredient rolls much more cleanly than a thick pile.

Starting from the edge closest to you, roll the tortilla away from you as tightly as possible, keeping even pressure along the full length of the roll. A tight roll is key to clean pinwheel slices that hold their shape.

Wrap the completed roll snugly in plastic wrap, twisting the ends like a candy wrapper to keep it compact. Repeat with the remaining 3 tortillas. Refrigerate all rolls for at least 1 hour (and up to 24 hours). Chilling is essential — it firms up the 8 oz queso crema so the rolls slice cleanly.
