Once the butter melts and begins to foam, add the diced 1 cebolla amarilla finamente picada and a pinch of 3 tbsp mantequilla sin sal dividida. Cook, stirring occasionally, until the onion is soft and translucent but not browned, about 5–6 minutes.

Stir frequently after each addition, keeping the heat at a steady medium to medium-low simmer. Wait until each ladleful is almost fully absorbed before adding the next. Do not rush this process — it takes about 20–22 minutes total and is what creates the creamy texture.

After about 18 minutes, begin tasting the rice with each addition of 6 cups caldo de pollo bajo en sodio preferiblemente. The risotto is done when the rice is al dente — tender throughout but with just a slight bite in the very center — and the mixture flows slowly like loose porridge when you tilt the pan. You may not need all the broth.

Serve immediately in warm, shallow bowls. Top with extra 1 cup queso Parmesano recién rallado, más para servir and a sprinkle of fresh 2 tbsp perejil fresco picado, para decorar if desired.
