Grate the 8 oz sharp cheddar cheese rallado fresco and 4 oz Monterey Jack cheese rallado fresco on the large holes of a Grater. Set aside at room temperature — cold cheese added to a hot sauce is the #1 cause of grainy queso.

In a medium Saucepan over medium heat, melt the 2 tbsp unsalted butter. Add the diced 0.5 white onion picada finamente and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the 2 cloves garlic picado and 1 jalapeño jalapeño sin semillas y picado finamente (if using) and cook for 1 more minute until fragrant.

Sprinkle the 2 tbsp all-purpose flour over the 0.5 white onion picada finamente mixture and stir constantly with a Wooden Spoon or Whisk for 1–2 minutes, until the raw flour smell cooks off and the mixture looks slightly golden. This is your roux — it's what keeps the queso smooth.

Slowly pour in the warm 1 ½ cups whole milk tibia, whisking constantly to prevent lumps. Add the ½ cup heavy cream. Continue whisking over medium heat until the sauce thickens enough to coat the back of a spoon, about 3–4 minutes.

Stir in the drained 1 can diced tomatoes with green chiles escurrido, ½ tsp ground cumin, ½ tsp chili powder, ¼ tsp smoked paprika, ½ tsp kosher salt plus más, and ½ tsp kosher salt plus más. Reduce heat to low.

Add the grated 8 oz sharp cheddar cheese rallado fresco one small handful at a time, stirring each addition fully into the sauce before adding the next. Never rush this step — adding cheese too fast or over high heat will cause it to seize and turn grainy.

Once all the 8 oz sharp cheddar cheese rallado fresco is melted and the queso is smooth and glossy, stir in the fresh 1 tbsp fresh lime juice. Taste and adjust ½ tsp kosher salt plus más as needed.
