Whisk the 6 huevos yemas y claras separadas yolks with ½ cup of ½ cup azúcar granulada until the mixture turns pale yellow and slightly thickened, about 2 minutes.

In a medium Saucepan over medium heat, combine the 2 cups leche entera and 1 cup of 1 cup crema pesada. Heat until steaming and just beginning to simmer around the edges — do not boil. Remove from heat.

Temper the 6 huevos yemas y claras separadas: very slowly pour about ½ cup of the hot 2 cups leche entera mixture into the 6 huevos yemas y claras separadas yolk mixture in a thin, steady stream, whisking constantly. This gradually raises the temperature of the 6 huevos yemas y claras separadas without scrambling them.

Pour the tempered 6 huevos yemas y claras separadas mixture back into the Saucepan with the remaining 2 cups leche entera mixture, whisking to combine. Do not let it boil.

Press a sheet of Plastic Wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate until thoroughly chilled, at least 2 hours or up to overnight.

Once the custard is fully chilled, beat the reserved 6 huevos yemas y claras separadas whites with a Hand Mixer or Stand Mixer on medium speed until foamy. Gradually add the remaining ¼ cup of ½ cup azúcar granulada and continue beating until soft, glossy peaks form.
