Rinse the 12 oz arándanos rojos frescos lavados y seleccionados, descartar los blandos o arrugados under cold water in a Colander and pick through them, discarding any that are soft, shriveled, or discolored.

Uses

  • Colander
  • 2–3 min
  • Medium

Combine the 1 cup azúcar granulada and 1 cup agua in a Saucepan over medium heat. Stir occasionally until the 1 cup azúcar granulada has fully dissolved, about 2–3 minutes. You don't need the 1 cup agua to boil — just heat until the 1 cup azúcar granulada is no longer grainy.

Uses

  • Saucepan

Add the 12 oz arándanos rojos frescos lavados y seleccionados, descartar los blandos o arrugados and a pinch of 1 pinch sal to the Saucepan. If using, add the 1 tsp cáscara de naranja de aproximadamente media naranja grande and ¼ tsp canela molida now. Stir to combine.

Uses

  • Saucepan
  • Medium-High

Increase the heat to medium-high and bring to a boil. You'll start to hear the 12 oz arándanos rojos frescos lavados y seleccionados, descartar los blandos o arrugados popping — this is normal and expected. Stir occasionally.

  • 10–12 min
  • Medium-Low

Once boiling, reduce the heat to medium-low and simmer uncovered for 10–12 minutes, stirring every couple of minutes. The 12 oz arándanos rojos frescos lavados y seleccionados, descartar los blandos o arrugados will burst and the sauce will thicken noticeably. It will look loose at this stage — that's fine.

Remove from heat. Taste the sauce and adjust sweetness if needed — add 1–2 tablespoons more 1 cup azúcar granulada if it's too tart for your preference, and stir until dissolved (the residual heat will melt it).

  • 60 min

Transfer the sauce to a Mixing Bowl or Quart Jar. It will look thin while hot but will thicken to a perfect, jammy consistency as it cools. Let it cool to room temperature, then refrigerate for at least 1 hour before serving. Serve chilled or at room temperature.
