Soak the bread: Place the torn bread pieces in a mixing bowl and pour about ¼ cup of agua fría más para ajustar consistencia over them. Let soak for 5 minutes until softened. This helps emulsify the soup and gives it body.

Prep your vegetables: Core and roughly chop the tomatoes, peel and seed the 1 pepino inglés (cut off a small piece to save for garnish), core and seed the 1 pimiento rojo (save a small piece for garnish), and roughly chop the ½ cebolla roja pequeña. No need for fine cuts — the blender does the work.

Blend in batches: Add the tomatoes, 1 pepino inglés, 1 pimiento rojo, ½ cebolla roja pequeña, 2 dientes de ajo machacados y, and soaked bread (squeeze out any excess water first) to a blender. Blend on high speed for about 60 seconds until very smooth.

Emulsify with olive oil: With the blender running on medium speed, slowly drizzle in the ⅓ cup aceite de oliva virgen extra through the lid opening. This creates a smooth, slightly creamy consistency. Add the sherry vinegar, 1 tsp sal kosher más, ¼ tsp pimienta negra, and ½ tsp pimentón (if using), and blend for another 30 seconds.

Adjust consistency: Add ½ cup agua fría más para ajustar consistencia a little at a time and blend briefly, until the soup reaches your preferred consistency — it should be pourable but not watery. Taste and adjust 1 tsp sal kosher más and vinegar as needed.
