Drain and rinse the canned 24 pieces caracoles de Borgoña enlatados escurridos y enjuagados under cold water. Pat them dry gently with paper towels. Rinse the 24 pieces conchas de caracol thoroughly under warm water and allow them to air-dry completely.

In a mixing bowl (or using a stand mixer with the paddle attachment), beat the softened mantequilla sin sal until smooth and fluffy, about 1 minute. Add the minced ajo, 2 tbsp chalota, ¼ cup perejil fresco de hoja plana finamente picado, 1 tbsp vino blanco seco (if using), 1 tsp sal kosher, ¼ tsp pimienta negra, and 1 pinch nuez moscada (if using). Mix until everything is evenly incorporated and the butter is pale green and fragrant. Taste and adjust seasoning — it should be boldly seasoned since it will mellow in the oven.

Place a small amount of garlic herb 8 oz mantequilla sin sal (about ¼ tsp) into the opening of each shell using a small wooden spoon or your finger. This creates a base layer that keeps the snail moist.

  • Burgundy Snails

Using tongs or your fingers, tuck one 24 pieces caracoles de Borgoña enlatados escurridos y enjuagados into each shell, pushing it gently but firmly so it sits securely inside.

Uses

  • Escargot Shells

Pack the remaining garlic herb 8 oz mantequilla sin sal generously over the opening of each shell, sealing the snail inside and mounding the butter slightly. Don't be shy — this butter is the star of the dish.

Uses
