In a small Mixing Bowl, whisk together the 3 tbsp mayonesa, 1 ½ tbsp ketchup, 1 tsp mostaza amarilla, 12 rebanadas de encurtidos de eneldo, and ½ tsp polvo de cebolla until smooth. Taste and adjust seasoning. Cover and refrigerate until ready to use.

Uses

  • Mixing Bowl

Place the 1 ½ lb carne molida de res mezcla 80/20 (se prefiere la paletilla) in a large Mixing Bowl. Add the 1 tsp salsa Worcestershire, ½ tsp polvo de ajo, 1 tsp sal kosher, and 1 tsp sal kosher. Using your hands, gently mix until just combined — do not overwork the meat or the patties will become dense and tough.

Uses

  • Mixing Bowl

Divide the mixture into 4 equal portions (about 6 oz each). Gently shape each into a round patty about 4 inches wide and 3/4 inch thick. Use your thumb to press a shallow dimple in the center of each patty — this prevents the burger from puffing up as it cooks.
