Pat the 3 lb alitas de pollo completely dry with paper towels — this is the single most important step for crispy skin. Any moisture left on the surface will steam instead of crisp.

In a large mixing bowl, toss the dried 3 lb alitas de pollo with 1 tbsp polvo de hornear, 1 tsp sal kosher, ½ tsp pimienta negra, and ½ tsp polvo de ajo until evenly coated. The 1 tbsp polvo de hornear raises the skin's pH and helps it brown and crisp up beautifully.

Uses

  • Mixing Bowl
  • 60–480 min

Arrange the 3 lb alitas de pollo in a single layer on a wire rack set over a aluminum foil-lined baking sheet. Make sure the wings aren't touching each other. For even crispier results, refrigerate the coated 3 lb alitas de pollo uncovered for 1–8 hours before baking.

Uses

  • Wire Rack
  • Aluminum Foil
  • Baking Sheet
  • Baking Powder
  • Chicken Wing

Switch the oven to broil (high). Broil the 3 lb alitas de pollo for 3–5 minutes, watching closely, until the skin is deeply golden and crackling. Remove from the oven immediately.

Uses

  • Oven
  • Medium-low

While the 3 lb alitas de pollo are in their final bake, melt the 4 tbsp mantequilla sin sal in a small saucepan over medium-low heat. Add the ½ cup Frank's RedHot Original, 1 tsp vinagre blanco, ½ tsp salsa Worcestershire, ½ tsp polvo de ajo, and 1 pinch pimienta de cayena (if using). Whisk together until fully combined and smooth. Keep warm on low heat — do not let it boil.

Uses

  • Saucepan
  • Worcestershire Sauce

Taste the sauce and adjust: add more ½ cup Frank's RedHot Original for heat, more 4 tbsp mantequilla sin sal for richness, or a touch more 1 tsp vinagre blanco for tang. Remove from heat.

Uses

  • Hot Sauce
  • Worcestershire Sauce

Transfer the hot 3 lb alitas de pollo to a large mixing bowl. Pour the buffalo sauce over the 3 lb alitas de pollo and toss vigorously until every wing is fully coated and glossy.

Uses

  • Hot Sauce
  • Worcestershire Sauce
  • Chicken Wing

Arrange the sauced 3 lb alitas de pollo on a platter. Serve immediately alongside 1 cup aderezo de queso azul, 4 stalks apio sticks, and 2 medium zanahorias sticks.
