Preheat your Waffle Maker according to the manufacturer's instructions. Preheat your Oven to 200°F and place a Baking Sheet inside — this keeps finished waffles warm and crispy while you cook the rest.

In a large Mixing Bowl, whisk together the 1 ¾ cups harina de trigo, 2 tsp polvo de hornear, 1 tbsp azúcar granulada, and ½ tsp sal until well combined. Set aside.

Pour the wet ingredients into the dry ingredients and stir gently with a Spatula until just combined. A few small lumps are completely fine — do not overmix or the waffles will be tough.

In a clean Mixing Bowl (or the bowl of a Stand Mixer fitted with the whisk attachment), beat the 2 huevos separados, yemas y claras divididas whites on medium-high speed until stiff peaks form, about 2–3 minutes. The whites should hold their shape when the whisk is lifted.

Using a large Spatula, gently fold the whipped 2 huevos separados, yemas y claras divididas whites into the batter in two additions. Use a light hand — fold in sweeping motions from the bottom up, rotating the bowl. Stop as soon as no large white streaks remain. This step is the key to light, airy waffles.

Lightly brush or spray the preheated Waffle Maker with 1 tbsp aceite de cocina neutro or melted ½ cup mantequilla sin sal derretida y ligeramente enfriada. Pour enough batter to fill the iron about three-quarters full (typically ¾ to 1 cup, depending on your iron's size). Close the lid and cook until the waffle is deep golden brown and steam has mostly stopped escaping from the sides, about 4–6 minutes. Do not open the lid early.

Carefully remove the waffle with a Dipping Fork or Tongs and transfer directly to the Baking Sheet in the warm Oven. Do not stack the waffles — lay them in a single layer so they stay crispy. Repeat with the remaining batter, greasing the iron before each waffle.
