In a mixing bowl, whisk together the ½ cup vinagre de arroz, ½ cup agua tibia, 2 tbsp azúcar granulada, and 1 tsp sal kosher until the 2 tbsp azúcar granulada and 1 tsp sal kosher are fully dissolved.

Add the 1 cup rábano daikon pelado and 1 cup zanahorias peladas matchsticks to the brine. Toss to coat, then let them sit at room temperature for at least 30 minutes, tossing occasionally. They should taste tangy and slightly softened but still have a pleasant crunch.

In a mixing bowl, whisk together the 3 tbsp salsa de soya, 1 tbsp salsa de pescado, 1 tbsp salsa de ostión, 2 tbsp azúcar granulada, 3 cloves ajo minced, 1 tsp aceite de sésamo, and ½ tsp pimienta negra to make the marinade.

Add the sliced lomo de cerdo cortado en rodajas finas de 1/4 pulgada to the marinade and toss to coat. Let marinate for at least 15 minutes at room temperature, or up to 4 hours in the refrigerator.

Heat a skillet over medium-high heat and add the 1 tbsp aceite neutro como aceite vegetal o de canola. Once shimmering, cook the 1 lb lomo de cerdo cortado en rodajas finas de 1/4 pulgada slices in a single layer (in batches if needed) for 2–3 minutes per side, until caramelized and cooked through. The edges should have a little char. Transfer to a plate.

In a mixing bowl, stir together the ¼ cup mayonesa and Maggi seasoning (if using). If using pâté, keep it separate for spreading directly onto the bread.

Preheat your oven to 400°F. Split the baguettes lengthwise and place them cut-side up on a baking sheet. Lightly butter the cut sides if desired. Toast in the oven for 4–5 minutes until the crust is crispy and the interior is warm but still soft.

Spread a generous layer of mayonesa on the bottom half of each toasted baguette. If using pâté, spread a thin layer on the top half.

Layer the bottom half with the cooked 1 lb lomo de cerdo cortado en rodajas finas de 1/4 pulgada slices, followed by a few whole pepino inglés cortado en rodajas finas a lo largo slices, a generous pinch of drained pickled 1 cup rábano daikon pelado and 1 cup zanahorias peladas, 2 whole jalapeños cortados en rodajas finas rounds, and a handful of fresh cilantro fresco tallos sprigs.
