Heat Neutral Oil in a large Skillet or heavy-bottomed Pot over medium-high heat. Once shimmering, add 1 tsp semillas de comino and let them sizzle for 30–45 seconds until fragrant and just beginning to darken. Don't let them burn.

Add the diced 1 cebolla amarilla finamente picada and a pinch of 1 tsp sal kosher más. Cook, stirring frequently, for 10–12 minutes until the onion is deep golden brown. This is the most important step — properly caramelized onion is the foundation of a great chana masala. Don't rush it.

Add the minced 5 dientes de ajo picados and grated 1 tbsp jengibre fresco rallado o finamente picado. Stir and cook for 1–2 minutes until fragrant and the raw smell is gone.

Add all the ground spices from your spice Mixing Bowl (1 ½ tsp cilantro molido, 1 tsp semillas de comino, 1 tsp cúrcuma molida, ½ tsp pimienta de cayena ajustar, and 1 tsp garam masala más para terminar) directly onto the onion mixture. Stir constantly for 60 seconds to toast the spices in the oil — this blooms their flavor. If the pan looks dry, add a small splash of 1 cup agua to prevent burning.

Pour in 1 lata tomates triturados and stir to combine everything. Cook the tomato-spice mixture over medium heat for 8–10 minutes, stirring occasionally, until the oil begins to separate from the masala and the mixture darkens slightly. This step (called 'bhunao') concentrates and deepens the flavor.

Add the drained 2 lata garbanzos escurridos y enjuagados and 1 cup of 1 cup agua. Stir well to coat all the chickpeas in the masala. Bring to a boil, then reduce heat to medium-low.

Simmer uncovered for 15 minutes, stirring occasionally, until the gravy thickens to your liking. For a thicker, drier style, simmer longer. For a saucier curry, add a splash more 1 cup agua. Using the back of a spoon, lightly mash about a quarter of the chickpeas against the pan wall — this naturally thickens the gravy without any starch.

Stir in 1 limón pequeño cortado en gajos juice. Taste and adjust 1 tsp sal kosher más. Add an extra pinch of 1 tsp garam masala más para terminar at the end for a fresh, aromatic finish — this is a classic restaurant trick.
