When boiling chickpeas for larger batches, use a larger saucepan (3-4 quart) to prevent overflow. Monitor boiling more carefully and allow ~25 minutes for cooking time instead of 20 minutes Always taste and adjust seasoning at the end (step 6), as lemon juice, salt, and garlic are highly variable and personal preference matters significantly

Place the 1 lata (15 onzas) de garbanzos in a saucepan and add the ½ cucharadita de bicarbonato de sodio. Cover the 1 lata (15 onzas) de garbanzos by several inches of a 4 cucharadas de agua helada, then bring the mixture to a boil over high heat. Continue boiling, reducing heat if necessary to prevent overflow, for about 20 minutes, or until the 1 lata (15 onzas) de garbanzos look bloated, their skins are falling off, and they're quite soft. In a sieve, drain the 1 lata (15 onzas) de garbanzos and run cool 2 a 4 cucharadas de agua helada over them for about 30 seconds. Set aside (no need to peel the 1 lata (15 onzas) de garbanzos for this recipe!).

Meanwhile, in a food processor or blender, combine the ¼ taza de jugo de limón (de 1 ½ a 2 limones), 1 diente de ajo mediano a grande and ½ cucharadita de sal marina. Process until the 1 diente de ajo mediano a grande is very finely chopped, then let the mixture rest so the 1 diente de ajo mediano a grande flavor can mellow, ideally 10 minutes or longer.

Add the ½ taza de tahini to the food processor and blend until the mixture is thick and creamy, stopping to scrape down any ½ taza de tahini stuck to the sides and bottom of the processor as necessary.

While running the food processor, drizzle in 2 tablespoons 2 a 4 cucharadas de agua helada. Scrape down the food processor, and blend until the mixture is ultra smooth, pale and creamy. (If your ½ taza de tahini was extra-thick to begin with, you might need to add 1 to 2 tablespoons more 2 a 4 cucharadas de agua helada.)

Add the ½ cucharadita de comino and the drained, over-cooked 1 lata (15 onzas) de garbanzos to the food processor. While blending, drizzle in the 1 cucharada de aceite de oliva virgen extra. Blend until the mixture is super smooth, scraping down the sides of the processor as necessary, about 2 minutes. Add more 2 a 4 cucharadas de agua helada by the tablespoon if necessary to achieve a super creamy texture.

Taste, and adjust as necessary—I almost always add another ¼ teaspoon ½ cucharadita de sal marina for more overall flavor and another tablespoon of taza de jugo de limón for extra zing.

Scrape the hummus into a serving mixing bowl or platter, and use a spoon to create nice swooshes on top. Top with garnishes of your choice, and serve.
