Grate your 2 cups queso cheddar fuerte (and ½ cup queso Gruyère if using) fresh from the block — pre-shredded cheese contains anti-caking agents that prevent smooth melting. Let the grated cheese and 4 oz queso crema ablandado sit at room temperature for about 15 minutes before you start.

Melt the 2 tbsp mantequilla sin sal in a medium saucepan over medium heat. Add the 3 dientes ajo and cook, stirring frequently, for about 1 minute until fragrant but not browned.

Sprinkle the 2 tbsp harina de trigo over the 2 tbsp mantequilla sin sal and 3 dientes ajo. Whisk constantly for 1–2 minutes to cook out the raw flour taste — the mixture will look like a thick paste (a roux).

Slowly pour in the ¾ cup cerveza lager o ale ámbar while whisking constantly to prevent lumps. Then whisk in the ¾ cup leche entera in a steady stream. Continue whisking over medium heat for 2–3 minutes until the mixture thickens and is smooth.

Reduce the heat to medium-low. Add the 4 oz queso crema ablandado cubes and stir until fully melted and incorporated.

Add the 1 tsp mostaza Dijon, 1 tsp salsa Worcestershire, ½ tsp pimentón, ¼ tsp polvo de ajo, ¼ tsp pimienta de cayena, ½ tsp sal kosher, ¼ tsp pimienta negra, and 1 tsp salsa picante (if using). Stir to combine.

Remove the pan from the heat. Add the grated queso cheddar fuerte (and ½ cup queso Gruyère if using) a large handful at a time, stirring after each addition until fully melted before adding the next. Taking the pan off the heat prevents the cheese from breaking or becoming grainy.

Taste and adjust seasoning — add more ½ tsp sal kosher, ¼ tsp pimienta de cayena, or 1 tsp salsa picante as desired. If the dip is too thick, whisk in a splash of warm ¾ cup leche entera or ¾ cup cerveza lager o ale ámbar, 1 tablespoon at a time, until it reaches your preferred consistency.

Transfer to a warm serving bowl or keep in the saucepan on the lowest heat setting. Garnish with sliced cebollino fresco cortado finamente and a pinch of pimentón. Serve immediately with soft pretzels, crusty bread, tortilla chips, or raw vegetables.
