In a large saucepan over medium heat, melt 4 tablespoons of mantequilla sin sal. Once foamy, add the 4 tbsp harina para todo uso and whisk constantly for 1–2 minutes until the mixture turns a light golden color and smells slightly nutty. This cooks out the raw flour taste.

Slowly pour in the warm 3 cups leche entera and 1 cup crema pesada, whisking constantly to prevent lumps. Continue to whisk over medium heat for 4–6 minutes until the sauce thickens enough to coat the back of a spoon.
