Sautéing Asparagus in a Skillet
Heat a heavy skillet (cast iron, carbon steel, or thick stainless) over medium-high to high heat. Add a thin layer of oil and heat until shimmering. Add asparagus in a single layer — don't crowd the pan; cook in batches if needed. Toss and rotate frequently so spears brown and char lightly on multiple sides. Cook 5–8 minutes for most spears, up to 10 minutes for thick ones. Lower heat if the pan smokes heavily or spears risk burning before cooking through.
